INGREDIENTS:
Chicken breast – 3-4 pcs (no bone, no skin)
Fresh eggs
Salt
Black pepper
Flour- cornstarch or all purpose or sweet potato
Cooking oil
Soy sauce – 4 tablespoons
Hsiao hsing (Chinese rice wine) – 4 tablespoons (OPTIONAL)
Vinegar – 3 tablespoons
Chinese 5 spice powder
Basil leaves seasoning
Paprika (or mild chili powder)
PROCEDURE:

1. Pound the chicken breast, as thinly as possible.
2. Marinate the meat with soy sauce, Chinese rice wine, vinegar, Chinese 5 spice powder, salt, and pepper. 1 hour.
3. For the coating, mix flour, salt, a bit of pepper and basil leaves.
4. Beat the fresh eggs in another bowl.
5. After marinating, coat the meat with egg. Then cover it with flour mixture.
6. Heat in pan with oil, enough to cover the meat. Medium heat. Turn a few times to check both sides. 3-5 minutes (depends on the thickness of the chicken).
7. Remove from pan and remove excess oil onto kitchen towels.
8. Cut into bite size pieces.
9. Season with paprika or mild chili powder. Serve.
