SPIRAL PASTA WITH TUNA TOMATOES AND OLIVES

RECIPE


INGREDIENTS:

Spiral pasta – 3 cups

Tomato sauce or 4 cheese tomato sauce – 1 ½ cups

Tuna – 1 can

Olives – ½ cup

Tomato 1; diced

Olive oil – 2 tablespoons

Garlic – 2 clove, minced

Chili flakes – ½ tablespoon

Parsley – chopped, 1 tablespoon

Black pepper and salt to taste

Basil leaves – ½ tablespoon

Parmesan cheese for garnish

PROCEDURE:

1. Cook pasta. Make sure to add 1 tablespoon of salt to boiling water. 8-10 minutes, or until al dente. Reserve 2 tablespoons of pasta water to be used later for tossing.

2. Drain pasta with running water (to remove the salty taste).

3. Heat oil in pan. Medium heat.

4. Saute garlic. 30 minutes.

5. Add tomatoes and tomato sauce. 2 minutes continuous stirring.

6. Add basil leaves, salt and black pepper to taste.

7. Add tuna and olives. Mix and stir. 2 minutes.

8. Add parsley and chili flakes. Lower the heat of the pan.

9. Toss in pasta and pasta water. Mix everything. 1 minute.

10. Sprinkle with parmesan cheese (add more chili flakes if desired).

11. Serve.
