RECIPE
INGREDIENTS:
Ichiran instant ramen (for noodles and broth)
Pork belly – 2-3 pcs, 5 inches; marinated with soy sauce, ginger and garlic, and black pepper for at least 3 hours
Cooking oil – tablespoons
Nori / dried seaweeds
Spring onions – chopped
Tamago eggs – cut into half
Cayenne pepper
Coriander
PROCEDURE:
1. Boil noodles for exactly 6 minutes.
2. Turn off heat. And add the broth mixture. Stir. Set aside noodles and broth.
3. In a plate, cover the pork with oil. Put in microwave oven.
4. Preheat microwave oven (lowest heat / defrost level). 10-12 minutes. Check if meat is tender. If not, add another 2-4 minutes.
5. Add the meat on top of the ramen noodles and broth.
6. Add spring onions, nori and tamago as well.
7. Sprinkle meat with cayenne pepper. Add coriander in the middle of the bowl.
8. Serve.
BONUS
RECIPE OF SHOYU TAMAGO (JAPANESE SOY SAUCE EGGS)
INGREDIENTS:
Fresh eggs – 5
Soy sauce (dark) – ¼ cup
Brown sugar – 1 tablespoon
Cayenne pepper powder – ½ tablespoon
Garlic – 2, minced
Ginger – 1 thumb, chopped
Water – 1 cup
PROCEDURE:
1. Boil water.
2. Add vinegar (to make the egg whites firm).
3. Add eggs and boil for 6 minutes (duration of boiling of important).
4. Transfer the boiled eggs to a bowl with ice water (or water with ice cubes). This is called ice bath. 5 minutes.
5. While setting aside the eggs, mix the soy sauce, sugar, cayenne pepper, garlic and ginger.
6. Put them in a heated pan. 2 minutes, until caramelized
7. Add water. 1 minute. Turn off heat. Set aside the marinade.
8. Peel off the egg shells. Place in a bowl.
9. Pour in the marinade in the bowl.
10. Refrigerate for at least 12 hours. Can be used up to 4 days.
