INGREDIENTS:
3 salted egg (peeled; separate the yolk from white)
Chicken (cut into bite size or small cuts)
Cooking oil (enough to cover half the chicken while frying; 2 tablespoons for salted egg coating)
Butter (2 tablespoons)
Garlic – 3 cloves; finely minced
Flour/cornstarch
Black pepper
Salt
Chili powder
Dried curry leaves, or dried basil leaves

Cooking the fried chicken
1. Cut the chicken into bitable pieces. Sprinkle with black pepper and salt.
2. Beat an egg. Mix with some egg white (mashed) from the salted egg.
3. Coat the chicken.
4. Mix it with flour/cornstarch. Sprinkle with some chili powder.
5. Fry in the medium heat pan, until golden brown.
6. Remove from pan.
Making the salted egg coating
1. Mash the salted egg yolk. Set aside.
2. Heat the cooking oil. Low to medium heat.
3. Add butter.
4. Put in garlic. 1-2 minutes. Don’t make it brown.
5. Add the salted egg yolk. Stir continuously. It will become frosty then smooth.
6. Add the curry or basil leaves. Mix with salted egg yolk.
7. Add the chicken in low heat. Coat it with yolk.
8. Serve.
It is just really impossible to stop at one piece once you start a bite!
