INGREDIENTS:
Pork belly – 2 (cut into half)
Garlic – 2 cloves minced (for marinate); 2 cloves sliced (for cooking)
Onions – sliced into rings (for cooking)
Soy sauce – ¼ cup 4-5 tablespoons)
Calamansi juice – ¼ cup (4-5 tablespoons)
Oyster sauce – 1 tablespoon (optional)
Cracked black pepper – 1 teaspoon (for marinate)
Water – ½ cup
Cooking oil – 2 tablespoons
Ground black pepper – to taste
Salt to taste
PROCEDURE:
1. To marinate the pork, mix the garlic, so sauce, oyster sauce, calamansi juice, and cracked black pepper. Add the pork in the mixture and cover the meat completely.
2. Marinate for 1 hour.
3. Heat the cooking oil in the pan. Medium heat. Add the marinated pork.

4. Cook for 2 minutes or so each side (until they are golden brown). We will use the excess marinate mixture later.
5. Saute the garlic (for cooking) and half of the onions in the pan. 1 minute.
6. Then add water and the marinate mixture.
7. Bring it to boil. Then lower down the heat of the pan.
8. Cover the pan and simmer the pork for 10-15 minutes (depends on the thickness). Cook each side if necessary (if water level is below the pork’s thickness).
9. Add the remaining onions.
10. Add ground black pepper and salt to taste. 2 minutes.
11. Serve.
