INGREDIENTS:
Chicken breast – boneless, 2-3 pcs
Mayonnaise – ½ cup
Chicken soup – ½ cup (alternatively, mushroom soup without the mushrooms + 2 tbsp of water)
Parmesan cheese – grated, ¾ cup
Mozzarella cheese – 3 strips for each meat (approx. 1/3 cup)
Salt and pepper to taste – ½ teaspoon for marinate, ½ teaspoon for coating
Garlic powder – 1 teaspoon
Water – 2-3 tablespoons
Parsley – chopped, for garnish
PROCEDURE:
1. Marinate the chicken with salt and pepper.
2. Pat the chicken and place in a pan/container.
3. Add mozzarella on top of chicken.
4. In a separate bowl, mix the mayonnaise, chicken soup, parmesan cheese (half), salt and pepper, garlic powder and a bit of water.
5. Spread these over the chicken.
6. Sprinkle with the remaining parmesan cheese.
7. Preheat oven to 375 (if using microwave, preheat to 340W).
8. Bake the chicken for 1 hour (or 20-25 mins in microwave)
9. Serve with rice.
