Diced pork
Onion – 1, sliced
Garlic – 3 cloves, minced
Star anise – 1
Ground nutmeg (optional) – 1 teaspoon
White pepper – 1 teaspoon
Salt – 1 teaspoon
Oil – 3 tablespoons
Sweet soy sauce – 4 tablespoons (if none, you can mix 3 tablespoon of normal soy sauce, 1 tablespoon of brown sugar and 1 tablespoon of water)
Water – 1/2 cup
Spring onion - 3 stalks
Siling pansigang – 2, sliced thinly (deseeded)
Siling labuyo (chili) – 1-2, sliced thinly
PROCEDURE:
1. Saute ginger, onion, star anise and minced garlic for 3-4 mins. Medium heat.
2. Add diced pork. Cook for 3 minutes or until meat color is changed.
3. Mix and coat the pork with sweet soy sauce, salt, ground nutmeg and white pepper. Add all the chilis (pansigang and labuyo).
4. Add water and cook on low heat. Lid on.
5. Simmer until the sauce reduces and thickens. 12-15 minutes.
6. Add spring onions. 1 minute cook.
7. Serve.
